Green Bits

February in Minnesota is a difficult time. It seems as if it's been years since we've seen green and have actually felt the warmth that the sunlight is supposed to share. This is all I have to remind me that things can grow in dirt...

What I'm Reading Right Now

I am reading The Sea by John Banville. I am about 1/4 the way in and so far I am liking it. It is very descriptive and there is at least one word on each page that I need to look up. I like that in a book...

Recipe for CINNAMON BREAKFAST CAKE

There is not much I like more than dessert for breakfast. This is a recipe I use from www.recipezaar.com for a great morning indulgence. You will most likely already have every ingredient stocked. It makes the house smell like heaven! I usually half this recipe and only make one round 9" pan- it is a very elemental recipe where you can almost eye the amounts. ENJOY!

2 cups all-purpose flour
1 cup sugar (approx.)
1 1/4 cups milk
1-2 teaspoon vanilla
3 teaspoons baking powder
1 pinch salt
1 large egg (optional)

Topping-
1/2 cup brown sugar (more or less)
1-2 teaspoon cinnamon
1/4 cup melted butter (more or less)
chopped pecans (or other nut)

1~Set oven to 350 degrees F
2~Prepare a greased 13 x 9-inch baking dish, or two 8 or 9-inch round cake pans (although the batter will seem like it will fit into only one 8 or 9-inch pan, it rises a bit and will run over the sides if baked in just one pan)
3~In a bowl mix the flour, white sugar, milk, vanilla extract, baking powder, salt and egg until just combined (careful not to overmix)
4~Pour into prepared baking pan/s
5~Over the top, sprinkle evenly the brown sugar and cinnamon, next the chopped nuts, and then drizzle melted butter
8~Bake for about 20 minutes for 8 or 9-inch round cake pan, and about 30 minutes for a 13 x 9-inch pan

LEAVES COMPARED WITH FLOWERS- A Poem

A tree's leaves may be ever so good,
So may its bar, so may its wood;
But unless you put the right thing to its root
It never will show much flower or fruit.

But I may be one who does not care
Ever to have tree bloom or bear.
Leaves for smooth and bark for rough,
Leaves and bark may be tree enough.

Some giant trees have bloom so small
They might as well have none at all.
Late in life I have come on fern.
Now lichens are due to have their turn.

I bade men tell me which in brief,
Which is fairer, flower or leaf.
They did not have the wit to say,
Leaves by night and flowers by day.

Leaves and bar, leaves and bark,
To lean against and hear in the dark.
Petals I may have once pursued.
Leaves are all my darker mood.

~Robert Frost

In this frozen tundra that is Minnesota, I will gladly take either one....
